White wine
Our White Burgundy wines are all harvested by hand.
We use pneumatic presses for the wine to secure a careful and fully monitored press. In most cases we believe that we can increase the level of quality in our Chardonnays by fermenting in oak barrels. We can do that, because we have very old vines, – and our vineyards are located on the slopes with good exposure and drainage.
Our philosophy is to make our wines from only one specific parcel – with a few exceptions. This explains why almost all our wines are bearing the name of the parcel, from where the grapes come from.
In order not to dominate the wines with oak, we are using a large pallet of barrels – all 100% French oak: 228 liter, 300 liter and 500 l. barrels. Different coopers, different origin of French oak, different age and different toasting of the barrels. All different and balanced to each wine.
Ageing in barrels last from 8 – 18 months depending on the appellation.
After aging the wines are decanted in a stainless steel tanks for a couple of months before being bottled without filtration.
